The spirit is made from 100% 7-8 year old Espadin agave, sustainably estate grown in San Luis del Rio, Oaxaca. The agave piñas are harvested then cooked in a stone-pit oven fired with local oak wood. The cooked piñas are crushed with a traditional tahona, drawn by a donkey called Chicharito (Little Pea), and the resulting aguamiel and agave fibres are wild-fermented in wooden barrels. The musto is double-distilled in 250 L copper pot stills.
